Yummy Breakfast Casserole

I've been trying out breakfast casserole recipes for quite awhile now and finally found a winner for us! And of all places it was attached to a coupon for sausage in the Sunday coupon section (this was back at Easter folks, I'm a little slow getting it tried out and posted!) Here it is with my modifications of course. I can not make a recipe as stated, it goes against my nature (not sure if that's my stubborn nature, controlling nature, or the "I can do better than that" side of me).

Also- it's not the cheapest of recipes, but it makes a ton and is good for leftovers. It cost me about $9 to make it this time around and eggs were on sale! You could cut it in half pretty easily if you'd like.

1 pkg turkey sausage (I buy pre-cooked frozen)
6 English muffins (whole wheat)
1/4 cup butter melted
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup chopped red bell pepper
12 eggs
2 cups milk
1/2 tsp salt
1/2 tsp pepper
4 slices turkey bacon cooked and crumbled

Cut frozen sausage into 4 in slices. Have your 5 year old rip up all of the muffins and put them in the bottom of a greased 9x13 baking dish, drizzle with butter. Layer sausage, cheese and bell pepper. In large bowl combine eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.

Remove from fridge 30 min before baking. Uncover and bake at 350F for 45-50 minutes or until knife inserted into center comes out clean. Let stand 5 min. 12 servings.
